I produced a cookbook with two other mothers that we called ”Food and More” in 2005. We got the recipes from the inhabitants in Liden, that’s where I live, and then we made the cookbook. Here is one of the recipes from the book,that I think is a good starter.

The Liden Roll

The Liden Roll
Oven temperature: 200 degrees for about 25 minutes

This is what you need (8-10 portions):
125 g margarine
1½ cups of flour
3 cups milk
1 pinch of salt
4 eggs

Filling:
2 hard-boiled eggs
500 g unpeeled shrimp
½ -1 cup crab, cut into small pieces
2 cups whipped cream
1 cup mayonnaise
1-2 cup finely chopped dill
125 g green peas
salt
pepper

This is how you do:
Melt the margarine in a saucepan. Add flour and stir until it’s smooth. Add the milk and stir. Remove from the heat and allow it to get cool. Beat in the eggs, one at a time. Pour the batter into a baking tray, lined with baking paper. Bake in 200 degrees for about 20-25 minutes. Allow the cake to cool.

Boil the eggs for the filling and peel the prawns. Whip the cream until it’s almost stiff. Put in the mayonnaise, dill, shrimp, crab, peas, salt and pepper. Stir so that the ingredients are mixed well. Chop the eggs into small pieces and fold them into the filling. Broad the filling on to the cold “pancakes paste” and roll it into a roll from the long side.

Cut slices of the roll and serve a salad with it.
